One Pot Stew Chicken Again


I cook this one pot stew chicken again... Well, hubby and the kids love it, it's easy to prepare, hassle-free, mess-free, nutritious and tasty... You just need to cook plain rice to eat with this...

This time round I use kampong chicken instead... Hmm, I don't think there's significant difference between kampong chicken and normal chicken. Probably because the chicken had been soaked in the thermal pot for many hours to absorb the goodness of the olive oil and spices so the meat would be tender and tasty even if you use normal chicken.

Fried Instant Noodles


This is a good choice if you .... want to eat noodles desparately but don't have fresh noodles in your kitchen and do not want to resort to msg-rich instant noodles:)


I have some left over veges and fish balls so I toss them all in... I have some frozen prawns in my freezer so I added some as well.


I was surprised that the noodles turned out yummy. I added chilli and that didn't stop my 5 year old from eating. To put off the fire, he drank lots of water!

Crispy Cereal Prawns

This is the cooking method I got from the cereal premix.


1. Slice open the back of the prawns and remove the intestines. Retain the shell, the head and the tail.

2. Fry the prawns in hot oil till cooked. Put aside.

3. Melt 5 tablespoons of margarine in the wok. Add 5 beaten egg yolks and fry till cooked.

4. Add some oil and fry 5-10 pcs chilli padis and 10 pcs of curry leaves. Add in the cereal premix. Then add in the prawns and the egg. Mix well and serve.

I omit the chilli padis and the curry leaves because I don't have them in my fridge. And I think can omit the egg as well if I prepare this dish again next time.


The brand of the cereal premix I use is Singlong. I find it a bit salty. So next time I think I'll try to cook with nestum cereal instead of using the premix. Anyway the ingredients for the premix include cereal, sugar, pepper, salt and seasoning.

Sardines


Fry some red onions and fresh chillies in oil. Then add in canned sardines.

Stir Fry French Beans with Minced Garlic, Dried Prawns (Soaked in water and chopped finely) and Chilli paste.

This is an easy and nutritious one pot dish that my kids love. I love one pot dish as well because you just need to dump everything into one pot and that's it. Serve with plain rice.

Fried Batang Fish with Black Soy Sauce


Fry the batang fish with some oil. Remove from pan and put aside to drain away the oil. Add some black soy sauce, sweet sauce and water into the pan to make the sauce. Pour the sauce over the fried fish.

Steam Pomfret (Teochew Style)


Top the fish with salted vegetables, sliced tomatoes, mushrooms and 2 salted plums. Add 1 teaspoon of cooking oil and some water. Steam for ~10 to 12 mins.

Steam Rice

I recently learn a trick on how to cook small amount of rice. Instead of cooking rice with the rice cooker, we can steam the rice with the wok, just like the way we steam our fish, meat, etc...

Method:
1. Wash some rice and put the rice on a metal plate. Add water. (1 cup rice = 1 cup water)
2. Steam for ~10 mins or until rice is cooked.
3. If you prefer softer texture, you can soak the washed rice in some water and keep in the fridge overnight.

It's really easy and saves on electricity. And the best part is there is less cleaning to do! It's quite difficult to cook small amount of rice with the rice cooker so what I did in the past was to cook more rice and then cook fried rice the next day with the leftover rice. Now with this method, I can even cook rice for 1 person!

Curry Chicken


1. Heat up some oil. Fry some chopped onions till fragrant.

2. Add some chilli paste.

3. Add curry paste and continue to stir fry. (To make the curry paste, add some water to 2 tablespoon of curry powder and mix well)

4. Add chicken meat (I use 2 boneless thigh meat with skin and fats removed).

5. Add 1/2 small cup water and add in potatoes, carrots and tomatoes. Allow to simmer for short while.

6. Add in 1/2 can of evaporated milk (can use coconut milk too). You can add more milk for thicker curry but don't add more than 3/4 can.

7. Allow curry to cook for 15 mins. Add in salt (to taste).

8. Transfer into a thermal pot to save energy. The heat will soften the potatoes and carrots as well.


Serve with rice or bread. I prepared some fresh greens (cucumber and lettuce) to go with the curry.

Mee Siam



METHOD

Bee hoon:

1. Heat up some oil. Add some garlic and baby dried prawns. Add assam chilli paste. Fry till fragrant.

2. Add in bee hoon (soaked). Add water and cover lid to simmer.

3. Add salt if needed. Add in bean sprouts and cover lid again for a short while.

(If you want to save time, don't have to fry the bee hoon. You can just add the soaked bee hoon into the soup and allow to simmer for a short while)

Soup:

1. Heat up some oil. Add some baby dried prawns. Add 2 tablespoon of assam chilli paste. Fry till fragrant.

2. Add 1 tablespoon of peanut butter.

3. Add 1 tablespoon of bean paste. Fry till fragrant.

4. Add in one pot of assam water (soak assam in water for 20 mins to get assam water)

5. Bring to boil.

Garnish:

1. Beancurd (fried and diced)

2. Hard boiled egg

3. Chopped spring onions

4. Lime
